As a guest, it is easy to make smart environmental choices when you dine at a Sodexo café. We know today's college students want to do the right thing for the planet and we also understand you lead busy lives, so your Sodexo chefs and managers do a lot of the work for you behind the scenes!

From purchasing local seasonal produce whenever possible to reducing inorganic and organic waste, your campus team is dedicated to providing you with an exceptional dining experience that is good for you and good for the planet.

This commitment was formalized with Sodexo's Better Tomorrow Plan. The Better Tomorrow Plan includes 14 commitments for a brighter future by focusing on three key priorities: health, community and planet. Learn more about the Better Tomorrow Commitments.

While your Sodexo team works hard behind the scenes, they also count on student engagement and enthusiasm to spread the word about what you're doing together on your campus. We encourage you to work with your local Sodexo management team to continue to innovate and improve sustainability efforts in your community.

We are dedicated to continually improving our Sustainability efforts. Here are a few things we are already doing to be more sustainable:

Local Purchasing: We are proud to support our community! Check out a map of local farms and businesses supported by Sodexo at UofL.

Fair Trade: We support a Better Tomorrow by serving Fair Trade coffees everyday at both Simply to Go locations, the campus dining hall Ville Grill, Tulip Tree in Ekstrom Library, Jazzman's Cafe in the SAC, and any where you want to be through Flavours Catering.

Trayless Dining: We offer trayless dining at Ville Grill, our all-you-care-to-eat resident dining hall. This helps to reduce the food waste on our campus, as well as the amount of water that would be used to wash the trays.

Vegan and Vegetarian Dining: Wild Mushroom, a venue within the all-you-care-to-eat resident dining hall, features a menu dedicated to serving protein and nutrient rich vegan and vegetarian meals. Going meat-free, even for only a few meals a week, can have a big impact toward reducing your carbon footprint.

Composting: Though all our operations practice waste-minimizing techniques, all food operations produce organic waste. At UofL however, that waste is diverted from the landfill and put to good use in gardens and landscaping as nutrient rich compost. What goes into compost? The fruit and vegetable trimmings for your fresh fruit cup at Simply to Go, the Heine Brothers' coffee grounds from Tulip Tree Cafe, the scraps from your plate at Ville Grill, and much more.

Food Donation: When available, we donate left-over food to The Lord’s Kitchen and Wayside Christian Mission. Each semester, Sodexo sponsors a Helping Hands campaign that raises awareness about hunger and accepts student donations for our local food bank, Dare to Care. The finals feast, Breakfast for a Buck also facilitates food donation by lowering the entrance fee to just $1 when you bring a canned food good.

Recycled Napkins: We use recycled content napkins at all of our dining locations on campus.

Reusable Mug Program: We sell reusable bottles and mugs at many of our dining locations and offer significant discounts when customers use these, or their own, reusable mugs.


Other ways you can help:

  • Take only the number of napkins you need per meal.
  • Take only one cup for each beverage purchase.
  • Bring your own mug from home for beverage purchases - discount!
  • Recycle paper, plastic and aluminum throughout campus at the designated single stream recycling stations.
  • Dine in rather than carrying out.
  • Volunteer for a Green Service Project. Call 502-852-7261.
